Speck Pfannekuchen


End of the Month Dinner J


Here is another one of those childhood memories dinners… so easy, so cheap and oh so moooorish ! Having been brought up in a German speaking country, this is one of those standard pub foods you will find in Germany, Holland and even in the North part of Switzerland….. Speckpfannekuchen aka Bacon Pancakes.


 

2 onions
1 pkt of chopped bacon


5 eggs
500 ml milk
½ cup fizzy mineral water
About 1 cup flour
Canola oil for frying

Half onion and slice then fry until golden
Fry bacon until crisp .Keep in a separate bowl

Mix eggs, milk, water and flour to get a thickish pancake mixture.

Heat oil (not too much), pour in a small ladle of egg mix and sprinkle some onions and bacon into mix.

Turn over as soon as the edges go brown.

Serve with a lekker green salad .. et voila ! amazing dinner !
